Antimicrobial resistance of foodborne pathogens has become a major global concern for human and animal health, bacteria such as Salmonella are the main microorganism related to food poisoning and have the ability to survive constant changes in environmental factors. Therefore, it was decided to search for this pathogen in foods such as ground beef, from which a total of 100 samples of ground beef were obtained, selected from different supermarkets in Managua, of these only Salmonella was isolated in 4 samples spp, which phenotypically and genotypically presented beta-lactamases, conferring resistance to cephalosporins and limiting the use of fluoroquinolones due to intermediate resistance to ciprofloxacin.
